This weekend I attended a dinner to which I needed to take a dessert. Due to the unexpected snowfall, I really wanted to avoid going to the grocery store if all at possible. So...I began to check my pantry for things that I could use to create an edible dessert. I remembered that my friend, Nancy, showed me a great website a few months ago that could solve this dilemma!

I typed in the few things I did have, coconut and white cake mix, and several hundred recipes popped up. All I did was look until I had all of the necessary items for a recipe, and voila! Coconut cupcakes were the outcome!
